- 1/4 cup of raisins
- 1/4 cup of chopped dates
- 1/4 teaspoon of cardamom powder
- A few strands of saffron (optional)
- 2 tablespoons of cornflour (optional, for a thicker texture)
- 2 tablespoons of milk (to mix with the cornflour)
Instructions:
- Boil the Milk:
- Pour the milk into a heavy-bottomed pan and bring it to a boil.
- Reduce the heat and simmer the milk, stirring continuously to prevent it from sticking to the bottom, until it reduces to half its original volume.
- Prepare Cornflour Slurry:
- Mix the cornflour with 2 tablespoons of milk to form a smooth slurry. This step is optional but helps in thickening the kulfi mixture.
- Add Sweeteners and Flavorings:
- Add the condensed milk, sugar, and cornflour slurry (if using) to the reduced milk. Stir well to combine.
- Continue to simmer the mixture on low heat, stirring continuously until it thickens.
- Add Dry Fruits:
- Add the chopped almonds, cashews, pistachios, walnuts, raisins, and dates to the thickened milk mixture.
- Stir in the cardamom powder and saffron strands (if using) for added flavor.
- Cool the Mixture:

- Freeze the Kulfi:
- Pour the cooled mixture into kulfi molds or small cups.
- Cover the molds with aluminum foil and insert ice cream sticks into the center of each mold.
- Freeze the kulfi for at least 6-8 hours, or until completely set.
- Serve:
- To serve, dip the molds in warm water for a few seconds to loosen the kulfi, then unmold.
